Quick & Delicious Winter Veggie Soup

As the winter months set in, it’s common to crave for comfort food and find yourself indulging in some not-so-healthy but oh-so-delicious meals. From mugs of piping hot chocolate to a spicy bowl of ramen, winter food is definitely enjoyable. While you don’t need to deprive yourself from your favourites this season, you can substitute some meals with low-calorie but tasty soups made with the fresh winter produce.

This nourishing soup is seasonal and perfect for a chilly winter evening. The organic tomatoes add a tangy flavor while the other fresh veggies add a dash of colour and a whole lot of nutrition. It’s easy to prepare with no special ingredients except your seasonal veggies available at any grocery store.

For the Soup:
1 tbsp oil
¼ cup chopped onions
2 bay leaves
¼ cup chopped French beans
¼ cup potato & ¼ cup carrot, chopped
¼ cup chopped cauliflower
¾ cup chopped cabbage
¼ cup deseeded tomatoes
4 cups water

For the Seasoning & Garnish:
1 vegetarian seasoning cube
Salt, pepper to taste
Chopped parsley, grated cheese

Saute the onions and bay leaves in hot oil.

Add the beans, potatoes, cauliflower and carrots to the onions and saute for a few minutes.
Once the vegetables are slightly cooked, add the water and stir for around 20 minutes on a medium flame.
Add the cabbage, tomatoes in the saucepan and add the vegetable seasoning cube, salt and pepper and stir well.



After 3-4 minutes, turn off the stove and serve the soup hot garnished with parsley and grated cheese.
